New 25,000 sf “kitchenless” dining facility and social hub for contemporary students

Tipton Associates designed “Old Main Market” as a next generation dining facility to meet the expectations of contemporary students. Designed to nourish both mind and body, it is a social and informal academic center in addition to serving needs of food production, service and consumption. Incorporating a “Fresh Food Company,” “kitchenless” service platforms were developed around critical production equipment. This maximized their ability to provide fresh meals customized to individual tastes, as well as tremendous menu flexibility to change seasonally and adapt to culinary trends over time. The result allows for the best in sustainable culinary operations and reduced food waste. Sited near campus residences, it is located on the campus edge corner of a city block and open to the public. Interior/exterior transparency enhanced views and allowed the building to become a beacon of community and campus culture.

The Old Main Market with its Fresh Food Company concept and inviting atmosphere has been a big hit on our campus since opening its doors.  Our previous dining venue was located in a basement facility, very dark and not a pleasant dining experience at all.  This facility with its open spaces, abundant natural lighting and blend of architectural textures make this truly a welcome dining addition to our campus.
